How we brew it
Good tea forgives a lot. A few simple measures get you most of the way.
Green
75–80°C water

Warm the pot, measure the leaf, and pour water just off the boil for blacks, a little cooler for greens. Taste as it steeps and stop when it suits you — the numbers above are a starting point, not a rule. Keep your tea dry, away from light, and it will keep its character for months.
